If you look at these two sites they should give you a comprehensive list of possible accommodation. Jason's actually put out a book and the other site has other parts of the South Island if you click on the right hand list.
You may like to look at http://www.holidays-in-newzealand.com for some activities and interesting visits. You don't say what age group you need to cater for. Queenstown always has heaps to do.If you haven't been to Christchurch there will be plenty there too.
You obviously want to stay in one location and just do day activities I take it?
