Mt Ruapehu on the North Island is a good bet. You can get a day pass for beginners lessons (including equipment hire) for $95. There is cheap accommodation around as well. References :

A package deal is your best bet. Ski Express are the most well known one. This way everything is taken care of, including transport up to the mountains.
Their deals are good value. Personally I'd recommend one of the South Island fields. All the major fields are pretty good for beginners.
Basing yourself in Queenstown is a good idea because it's a really nice place to be – although I'd recommend the Remarkables rather than Coronet Peak for beginners.
Ruapehu (in the north Island) has two fields, Whakapapa & Turoa. They're both okay but they have less reliable snow than the south island fields & outside of skiing there isn't much around there. Go south to get the full on skiing experience! References : Skier
